= 面粉糕 Mee Hun Kueh =

Three sections for making a bowl of nice Mee Hun Kueh. Don't worry i'll interpret it step by step for your k ;)

Section 1 : Soup

Eh.. sorry forget to take photo of my soup while cooking. Hope the below details might draw u to the imagination.

Ingredients:-
.
Chicken Bone 鸡骨- 200gm
Ikan Billis 江鱼仔- 50gm
Dried Mushroom 香菇 - few pcs
*Pork Shoulder Butt - Preference (i added for my doggie to eat only haha not necessary!)
.

Steps:-
.
1. Clean the ingredients, put the meat, ikan billis & Mushroom into pot while plain water is boiled (abt 1500ml water).
2. Turn the heat to middle while it is boiled and leave it for an hour (the longer u cook the sweeter the soup become but don't over cook ya-_-'' )
3. Add some soya sauce or 鱼露 according to your preference. (I never add Ajinomoto to my soup, so if u like to put some then go ahead)
4. When the soup is ready, filter out the bones and ikan billis and keep the clear soup for cooking.

Section 2 : Mee Hun Kueh

Ingredients:-
.
Plain Flour - 200gm to 300gm (for 2 to 3 pax)
Egg - 1pcs
Plain water - 1/2 cup
Cooking oil - 1 soup spoon
Salt - 1 tea spoon

Steps:-

1. Mix the flour, egg , oil & salt on the tray. Add water bit by bit only when u found the mixture is tough/dry, don't add too many water at once ok! If water over added just put more flour until the mixture is not sticky to your hand.
2. When you find the mixture is fully mixed up, separated it follow the portion per serving.
3. Leave it in a covered Tupperware for at least 20mins before cooking to make sure the mixture is easy to tear later. (so Chinese call it to wait it 'raised' 发)


Section 3 : Cooking

Ingredients:-
.
Fish balls - preference
Drumstick - preference
Prawn - preference ( my favorite, cannot live w/o haha)
Fresh Mushroom - preference
Choy Sim - preference
Mee Hun Kueh - Ready in Section 2
Soup - Ready in Section 1

Steps:-
.
1. Boil the clear soup in the pot, put the drumstick, fish balls & Fresh Mushroom into it first.
2. Tear the Mee Hun Kueh pc by pc to the pot (as thin as possible), keep the soup boiling with middle heat.
3. Add in Choy Sim & Prawn when all the Mee Hun Kueh has all added. Keep it boiling for 1min (don boil too long or the mee hun kueh will become too soft).
4. Add some peppers and chili padi follow your preference.

= Otak-Otak Fried Egg =


Ingredients:-

Otak-Otak (ready made) - 1 box (around 200g)
Eggs - 3pcs
Soya Sauce - preferrence

Steps:-

1. Beat the eggs with the preference soya sauce (just a little will do).
2. Mashed the Otak-otak, and mix to the beaten eggs.
3. Warm the fry pan and Pour the mixtures to the slowly into it. Fry with middle heat.
4. Ready to serve when the eggs fried till golden.

= Hakka Nan-Ru Fried Pork 客家南乳炸肉 =


Ingredients:-
Pork (三层肉) - 300-400gm
Five spices powder (五香粉) - 1 tea spoon
Nan Ru (南乳)- 1 cube
Sugar (白糖)- 1 tea spoon
Soya sauce (酱油)- 1 soup spoon
Self-raised floor (自发面粉)- 1 soup spoon
Pepper(胡椒粉)- as per preference
*
Steps:-
1) Mixed all the ingredients together with the pork, marinade for 10-20minutes before fried.
2) Boil the oil in fryer, put the pork slowly into it (pc by pc) to make sure the pork won't stick together. Frying with medium heat.
3) Pork are ready to serve when it turned 'golden'.
